We are not a café and not a kitchen service. We are a citrus atelier: fruit from six grove plots, juice through a restored iron press, peel cooked in copper until it holds the light.
What we make
Every jar is dated to a plot and a press run. We bottle what the trees give that week, then stop when the copper pans are empty.

Juice drawn through the iron press, then married with peel oil and a light sugar syrup. Meant for water, soda, or a winter punch bowl — never as a bar programme.
Pith-on strips simmered until translucent, rolled in raw sugar, packed in waxed bags. The old port gift, rebuilt for a modern pantry.
We walk six grove plots on the Jaffa fringe and inland Sharon. Fruit is clipped, not pulled, and sorted by peel thickness before it ever sees the press.
A restored iron citrus press in the Yefet Street atelier takes the juice. Peel is reserved, zest is planed, and bitter pith is kept or discarded by recipe — never by habit.
Forty-two copper pans, numbered with wax pencil. Each batch is logged: plot, variety, sugar, set time. Jars cool on cedar racks facing the alley light.
The atelier
18 Yefet Street sits between Jaffa’s stone lanes and the sea wind. Visitors come to collect grove boxes, taste a spoon of the week’s set, and leave with cordials packed in tissue. We keep a tasting counter. We do not serve meals.
The Shamouti was once packed in wooden crates for steamships. We still stencil those crates — then fill them with jars instead of loose fruit.
Hours follow the fruit, not the nightlife: Sunday to Thursday 09:00–18:00, Friday 09:00–14:00, Saturday closed. Wholesale enquiries are answered from the same desk as private orders.
